Rocky Road Cookies with Almonds and White Chocolate Chips

I recently tried my hand at a bit of woodworking. You should know, before I begin, that I knew absolutely nothing about the subject. And truth be told, after all the fuss and mess, I still don't.

I wanted to create a new tabletop to play around with for my food photography. I was feeling uninspired with my current two choices: wooden dining room table and slab-of-wood-I-stained-that-looks-a-lot-like-dining-room-table. A change was in order. While place mats can be fun to experiment and play around with, I no longer wanted to be restricted to photographing something on a 15 x 11-inch surface (tougher than it looks!). Thus, my mission to create my own tabletops began.

I think this officially takes me from "enjoys food photography in her spare time" to "slightly obsessed." You'll still love me even if I am a little crazy, right?

After dropping $20 on five planks of wood, I was at a loss of what to do next. The wood sat in the garage for two months while I tried to figure out what to do with it. It got wet. It warped. It'll add character, I told myself when I tried to dowel all five pieces together and they refused to match up. It'll add character, I told myself when creating deep grooves and divots while mishandling a belt sander in an attempt to smooth the warped surface. It'll add character, I told myself when I accidentally dropped the heavy tabletop on cement and cracked one of the corners.

It'll add character... right?

I think that's going to be my new woodworking motto.

After painting the surface white and letting it dry, I christened it by photographing these cookies. And it was beautiful. Until, of course, I picked up one of the cookies after setting it on the table. Turns out you need to seal wood or the buttery goodness in your baked goods might just leave grease stains. Oops.

Well, there's always something new to learn. And if you are like me and trying to do woodworking, turns out there's everything new to learn. Um, does anyone happen to know how to get grease stains off wood?

Since I have an allergy to tree nuts, "Rocky Road" has eluded me for most of my life. I've lusted over this flavor in ice cream shops and bakeries for far too long. It's about time I did something about it. So today, that's exactly what I did.

Though these Rocky Road Cookies do not feature walnuts or marshmallows—the staples of that classic Rocky Road flavor—I don't think you'll mind. I think you might be too busy finding and nibbling at every last crumb to notice. Since I'm a little burnt out on marshmallows (yes, it's possible! I blame this, this, and this), I substituted in white chocolate chips instead. I feel that white chocolate chips have a texture better suited to cookies than marshmallows, while marshmallows have a texture better suited to ice cream. It's a personal preference, but I feel like it makes all the difference.

These Rocky Road Cookies with almonds and white chocolate chips may not be your traditional Rocky Road cookie, but it doesn't make them any less enjoyable. A rich chocolate cookie is absolutely stuffed full of white chocolate chips and almonds. Each bite showcases all of these flavors at once, providing your taste buds with a Rocky Road experience. Plus, these cookies kind of look a little rocky. I suppose that's what I get for stuffing them (too) full of flavor!

Cherry Almond Muffins

Over the last year I've evolved into a morning person. An early bird, if you will. Waking up with the sunrise and falling asleep shortly after sunset has slowly become a way of life for me. I've grown to embrace it. Some days, I can't even imagine sleeping through the early morning hours I've learned to love.

It never used to be this way.

I suffered from insomnia for many years. I was a night owl by circumstance, not by choice. Growing up, the thought of going to bed was enough to instill a deep dread within me. During my teenage years, it would take me nearly two hours to fall asleep at night, every night. Two hours. I would lay there, staring at the ceiling, imagining far away places and wishing my dreams would take me there. I longed for rest. Reading books, staying away from the television, trying to turn off my mind—nothing seemed to help.

Sleep eluded me.

As a result, I would sleep very late into the morning hours. The idea of waking earlier than 10 am sent shivers down my spine. I became the typical teenager, hardly sleeping during the week and crashing on the weekends.

During university, my symptoms only worsened. I would be awake until the wee hours of the morning doing homework or spending time with friends. Unfortunately for me, my courses were always early in the day. Instead of lying awake in bed hoping the sandman would drop by for a visit, I simply didn't sleep. For an entire semester, I averaged between 3-4 hours of sleep a night. I had cured my insomnia, but replaced it with mental and physical exhaustion.

Was it healthy? Certainly not. But it prevented me from spending those long hours in the dark, dreaming of sleep. I've had enough of those hours to last me a lifetime.

Last summer, I was determined to find a healthy balance. Each morning, both weekdays and weekends, I would set my alarm for the same time. I started late and gradually set it earlier over the next few months. I wouldn't go to bed until I was tired. Whether my drowsiness set in at 11 o'clock at night or 2 o'clock in the morning, it didn't matter. When my alarm went off the next morning, it was time to get up. No snoozing. No just five more minutes.

I gave my body a schedule and it had learned to adjust.

Every now and then I still have trouble falling asleep, but my insomnia has essentially disappeared. Though I'm often awake at the crack of dawn, I've grown to love it. My mornings feel long and luxurious, like I'm living on stolen time. I use these new found hours to go to the gym or bake sweet treats for you.

Being an early bird also means I get to enjoy muffins when they are meant to be enjoyed—in the morning, with a cup of tea.

Cherry Almond Muffins

These Cherry Almond Muffins are filling, yet retain a lighter texture. The cherries bring a soft sweetness to each bite. Almonds are mixed into the batter as well as sprinkled on top. During baking, the sprinkled almonds become lightly toasted, adding another dimension of flavor to these simple but delicate muffins. These are best served warm with a small pat of butter.

Dried Blueberry Granola

After much poking and prodding from friends and followers alike, I've finally decided to take the plunge and get myself a Twitter account. Follow me @pastryaffair! It's a place to keep up with my musings, questions, interesting finds from other places, and, of course, updates from The Pastry Affair.

I feel like an old, technologically challenged woman saying this but, up until a few days ago, I'd never even visited Twitter. I know, gasp. After sharing this unsightly (and, let's face it, embarrassing) confession, the very least you could do is be nice to me. Pretty please? I'm the new kid on the block.

Now, back to food.

Dried Blueberry Granola

I'm not one who normally gets excited about granola. Now don't get me wrong, I love a good granola. I would never say no to a delicious granola parfait. The real truth is that I just don't find granola as exciting as, say, a decadent dessert or 3-tiered cake. I mean, it's granola, right? Just a few toasted oats mixed with nuts and dried fruit.

Wrong.

After making this Dried Blueberry Granola, I want to eat my words. Granola can be exciting. This granola certainly attests to that. It reminds me of a really good raisin bran, never mind the fact that it features neither raisins nor bran. I believe the delicious simplicity lies in the texture. This granola isn't as clumped as you'd find it in stores, so it does have a texture closer to a cereal (which is perfect for munching with milk and yogurt).

Lately, whenever I find myself hunting around the kitchen for a snack, my hand somehow finds its way into this granola before I can stop it.

And, I find, I don't even want to stop it.

Dried Blueberry Granola

This Dried Blueberry Granola is hearty and filling. The granola is sweetened with brown sugar and honey. Add a handful of sliced almonds and coconut flakes, toast it in the oven, stir in a few dried blueberries, and now we're talking. This reminds me of the crunchy, breakfast version of this blueberry coffee cake. I love to eat my granola like a bowl of cereal. The milk softens a few of the oats turning the granola into a texture wonderland. Crunchy, chewy, sweet, fruity, this granola has a little bit for everyone. This recipe is easily doubled for those with a larger appetite or more mouths to feed.
