Strawberry Toasted Oat Yogurt Parfait

Dear Mother Nature,

I need a little spring in my life. Six months of winter is a little much even for a Northern-dwelling, frostbite-resistant me. I know you have a flair for creating frigid temperatures, snowflakes, and winds that rival a hurricane (which, don't get me wrong, I do appreciate so very much), but I could use a little break. A hiatus, if you will. Just a month or two (maybe three?) of a little sun and some non-snowy terrain. I don't think that's asking too much of you.

It's April. I want to see flowers. Green grass. Birds singing. I wouldn't say no to a bit of rain. Even thunderstorms, if you're not finished making enough of this fierce weather. Though, I must admit you were really clever with that thundersnow a week ago. I haven't seen that one before—a little bit of spring and winter at the same time.

I know you're busy wreaking havoc around the world and the desperate pleas of one of its inhabitants probably doesn't mean much to you. I think I've been pretty complacent until now—few complaints, fewer protests. I don't ask for much. I even forgave you for that freak snowstorm in the middle of May a couple years ago. You remember it, don't you? That day I was packing up and moving? You certainly made that day one to remember.

Now, I didn't want to come out and say this but you've left me no choice. I think you've gotten a bit callous and spiteful these past few years. Cold-hearted, even. You're supposed to be Mother Nature, not Tyrant Earth. Have you forgotten your gentle and nurturing instincts? Perhaps you are hanging out on the beaches of sunny Florida without a care in the world, but I'm knee deep in a snowbank and I'm not liking the weatherman's forecast. Another month of winter, Mother Nature? Really? What did I ever do to you?

Mixed Berry Crumble

I have a soft spot for neglected fruit. Slightly bruised, a little overripe, sitting quietly in the corner minding its own business. They might be a little imperfect. They might be a little flawed. They might not make the cover of any magazines. They might be just like me (and maybe you).

When I was last at the market, I spotted a small table full of all the overdue summer berries, looking for a good home. These were the leftovers. The unwanted ones. As if to prove my point, a smarmy woman walked by and remarked, "Oh, would you look at those. A mile past their expiration date if you ask me." Well, I wasn't asking her. And I bought them just the same.

Bruised fruit is absolutely perfect to make tarts, pies, and crumbles. When I made this crumble, I could hardly contain myself when they were baking in the oven. The fruit bubbled and boiled, filling the air with sweet scents. And these crumbles? They actually sung. The fruit crackled. It popped. It hissed with the glorious sounds of bubbling over. These crumbles are worth making for that and that alone.

Strawberry Shortcake

I grew up with a deep love for strawberry shortcake. I am not sure how or why it started but, by the age of five, I absolutely insisted to be served strawberry shortcake on my birthday (and for every birthday thereafter). I didn't need a sugar laden cake. No neon colored frosting. Just some simple cake, strawberries, and whipped cream and I was all yours.

This is the first time I made true shortcakes instead of a using a sponge or angel food cake in its place. The first batch I forgot the baking powder and ended up with delicious smelling rocks. Sigh. My second attempt lent me dense shortcakes (I should have realized whole wheat flour isn't particularly light). But these little shortcakes were so fantastically delicious that I ate two before I remembered these were even supposed to served with strawberries.

My little whole wheat shortcakes, you are more than good enough for me.
