Vanilla Pear Muffins

Vanilla Pear Muffins

There are two delinquent birds that like to wreak havoc around my neighborhood. They run up and down the streets without a care in the world. They chase and peck at wandering cats. Small animals run from them in terror. Theses birds are fearless. If I didn't know any better, I would imagine these birds were outlaws on the run from the law, showing man and beast just who's in charge.

In the early hours of the morning, they like to drum on the basement windows with their beaks. The sound is so loud, it resonates throughout the entire house. The first time I heard it, my sister and I were both certain that someone was trying to break in by pounding hammers against the windows. But, no. It was just the birds.

Gerber Daisies

After I caught them in the act, they ran away, pecking each other playfully as if to congratulate themselves on their dirty deeds. These birds know no boundaries. I'm almost afraid of them. I wonder, if I met them in a dark alley, would they chase me around and peck at my ankles?

I hope I don't have to find out.

Vanilla Pear Muffins

Since this early morning window pounding has become a regular affair, sleeping in has become a thing of the past. And, while this certainly doesn't make me too happy, I think the results of my early morning baking will please you.

This morning, I made some muffins. While many of you may scoff at yet another muffin recipe being sent your way, I would like to point out that these aren't just any old muffins; these particular muffins are something to write home about.

Instead of telling you what I think of them, I want to share what one of my muffin taste testers shared with me: "The muffins were not only delicious, but tasted unlike any other dessert I have consumed. The flavor of the pear nutmeg muffin has no equal; certainly nothing to which I can compare. The muffin occupies its own pedestal for delectability in the 'tasty and delicious' hall of fame. A truly unique combination of ingredients."

If that doesn't sell you on these, I'm not sure what will.

Vanilla Pear Muffins

These vanilla pear muffins are moist, tender, and one-of-a-kind. These muffins have a very unique texture, closely resembling a bread instead of a light cake. The flavors are what really make these muffins shine. Certainly you've had pears and nutmeg together before, but this will change everything you thought you knew about it. Combined with a hint of vanilla, this flavor fusion will blow your taste buds out of the water. Trust me when I say you need to make these muffins as soon as possible.

Vanilla Pear Muffins
Adapted from Inspired Taste

Yields 12 muffins

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
Pinch of salt
2 large eggs
1 1/2 tablespoons vanilla extract
1 tablespoon lemon (or orange) zest
1 cup packed light brown sugar
4 tablespoons unsalted butter, melted
1/4 cup vegetable oil
1 cup unsweetened applesauce
2 large ripe pears, thinly sliced
Granulated sugar, for sprinkling

Preheat oven to 400 degrees F.

In a large mixing bowl, whisk together the flour, baking powder, nutmeg, and salt. Set aside.

In another bowl, mix together the eggs, vanilla, zest, brown sugar, butter, oil, and applesauce until well combined. Fold the wet ingredients into the dry until just combined; do not overmix. Distribute the muffin batter evenly between 12-13 baking cups. Stick 3 thin slices of pear directly into top of the muffin batter. Sprinkle granulated sugar onto the muffins, if desired.

Bake for 20 minutes, or until the muffin tops are lightly browned and bounce back to the touch. Serve hot or at room temperature.

Love the idea of pear and vanilla together!
Great looking bakes! I wonder if I could possibly get permission to use one of your images and your recipe as a faux post for a university project focussing on cookery books I'm working on at the moment. I would give you full credit for it. Here's our blog so you can see that it's a legit project! http://theaustralianwomensweekly.yolasite.com Thank you!

Yowzah! These muffins look fabulous. Thank you for sharing the recipe, Kristin. I have been on a pear kick lately and these fit in deliciously :)
Didn't need much to sell these gorgeous morsels to me! I was hooked when I saw the words vanilla and pear together. Pear is probably one of my favourite and most understated fruit!! :) Great stuff.

These look amazing! Perfect for a Mother's Day breakfast! But I was wondering what kind of pears you used?

Your crow story reminds me of the commercials featuring the 2 crows and the window cleaning product. Sounds like they are targeting you for a practical joke. I feel for ya since they are quite noisy and pesky birds.

Love the sound of your recipe! I can't wait to try it.

Laura-- I used Bosc pears, but you could easily use Bartlet or other type of pear.

Oooooh boy do these look delicious. Pears are probably my favorite fruit, so I'm always trying to find something to make out of them that isn't a pear crisp (it's awesome, but I make it way too much).
By the way, I found your blog via Tastespotting a couple of days ago, and I am officially a fan. You have wonderful recipes, and the photography is sooo good (you've even inspired me to break out the kit lens again. I feel bad for ever having dismissed it....)

Those muffins look like a gourmet dessert. I'm definitely going to have to give these a try when pears come on sale. Thanks for the great recipe.
What a story! So glad it had such positive effects :) The muffins look delicious.

Oh man, I trust you! I really really want to make these right now... but I just rushed to check my pears, and it looks like a have to wait a day or two for them to ripen! doh!

I made these yesterday; they're delicious and moist (and almost gone.) But instead of topping the batter with the sliced pears, I took the unripe pear, diced it, sauteed it and then mixed it into the batter. I think I might make another batch today to freeze. Thanks for the great recipe!

Ok, I waited long enough! I just made these and posted on my blog about them (http://raisinquestions.wordpress.com/2011/05/06/what-if-i-dont-remember-how-i-made-these-pear-ginger-muffins/). Unfortunately, I was out of applesauce, so I couldn't follow your recipe exactly. :( I love how moist yours turned out to be. These are definitely going to be muffins that will be repeated! Thanks for the inspiration... I linked to you in my post!
Julie-- I love the adaptations you made. Sauteed pears are one of my favorite ways to eat pears. Thanks for the great idea!

Jennifer-- I'm glad you liked these muffins enough to post about them!

Made them last night. I used unsweetened apple and pear puree. They were wonderful straight from the oven and still really good today. I was thinking of using the muffin mix and adding blueberries rather than topping with pear. I think it is a wonderful mix for any fruit or nut muffin.

Thanks!

These muffins look delicious and perfect! Vanilla bean sounds like a wonderful complement to pear.
Kristin,
The muffins look lovely, we love the adaptation (AND the photographs)! Seeing these makes us wish we were back in Paris inside that muffin shop! Thank you SO much for trying them out! All the best!

Joanne & Adam-- Thank you! I'm so glad you shared this recipe so I could also enjoy a delicious piece of your trip to Paris!

Wow eating one right now... my fourth...

Nutmeg and pear are of course a great combination, and the vanilla really rounds things out perfectly. The muffins were a bit dense but still very moist and delicious. I'll definitely be doing these again.

Of course using the freshest ingredients yields the best result - use 1/2 tsp freshly grated nutmeg rather than 1/4 tsp powder, or 1.5 vanilla beans for 1.5 tbs extract (I was stoked to find these for $1.25 each at the local coop!!)

AP-- I'm glad you liked them! I agree, the fresher ingredients, the better. If only I could find a place to buy cheap vanilla beans...

Oh my! I made these just recently and I loved them but what surprised was my boys liked them as well! They are a bit finicky, but they were asking when I planned to make them again! I do also agree with the other posters, if you use everything fresh, it does come out better! My second attempt, I used fresher ingredients and it made a huge difference for the better!

Ava-- So glad your picky eating boys loved them! Fresh is best, definitely.

Wow. Just wow. I woke up early this morning and it was chilly and rainy (a rarity in Tampa) and I just needed these muffins. The crumb is perfect: not too crumbly and not too wet. And the flavors are so delicate. A welcome change from normally sugar-and-spice loaded pastries you find around this time of year!

Miranda-- Thank you so much! I'm so happy you liked these. :)

I just made these, and they are delicious! These muffins not only taste great, but they smell F.A.N.T.A.S.T.I.C. while they are in the oven. I will definitely be making these again, if not just to sit in the kitchen while they're baking. Thank you for posting these!!

Also, I used a cup of chopped apples in the place of unsweetened applesauce, as I did not have any applesauce on hand, and it seemed to work fine.

Knowing that I am not a baker, my husband's comment was "those look way too hard". Imagine his surprise! A very easy to follow recipe with an absolutely divine result. Thank you for sharing!
