Honey Rolls

Bread and I have grown close together over the years—at times, almost too close. You see, bread is one of those "dangerous friends" that your mother warned you about (except she was probably talking about those kids in high school instead of the food you eat, but the lesson is the same). Bread is the friend that is oh so fun (and tasty) to be around in moderation. But the more you spend time together, the more you'll realize that Bread also has a hidden agenda.

Bread loves to encourage you to make bad decisions (like eat moremoremore). You see, bread is insecure about her own bulky weight—she thinks she's a heavy cinnamon log when she's really just a light dinner roll—and would love to see you gain a few (dozen) pounds to make her feel better about herself.

Honey Rolls

Over breakfast, she'll hint that a fifth piece of toast might hold you until lunch. Over lunch, she'll ask if you want another helping of bread and cheese (and have you ever been able to turn that down?). Over dinner, she'll softly encourage you to grab another dinner roll to soak up that last bit of gravy.

Whenever I try to distance myself from bread for more than a week, we'll end up bumping into each other in the supermarket. She'll complain that we don't spend nearly enough time together and ask me if we're still friends because I haven't called in awhile. She'll make me feel guilty enough to plan a dinner date for the following evening (where I'll eat an entire fresh baguette with baked brie).

Bread and I have fallen into this trap before. We'll spend too much time together (like an entire week) and suddenly my pants are a little too tight. I think I need to start listening to my mother and be more careful of those dangerous friends.

Then again, maybe I'll get on that after I finish eating another one of these...

Honey Rolls

These honey rolls are soft, tender, and sweet. The rolls are sweetened with honey and coated with a layer of honey and butter. They are a little on the denser side, but no heavier than your average dinner roll. These are the perfect beginning or side to any meal. You'll definitely have a hard time eating just one or two. I caved and ate three; can you really blame me?

Honey Rolls
Adapted from A Cookie A Day

Yields 12 rolls

2 teaspoons active dry yeast
1 cup barely warm water
1/4 cup honey + 1 tablespoon, divided
1 teaspoons salt
1 egg
3 cups all-purpose flour, plus extra if necessary
1 tablespoon butter, melted

In a large mixing bowl, sprinkle the yeast over the warm water and let sit for 5 minutes. Add the honey, salt and egg. Stir until blended. Add 3 cups of flour and mix until the dough comes together. If using a standing mixer, knead the dough with the dough attachment for 5-7 minutes, or until elastic. If not, knead the dough on a lightly floured surface until soft and elastic (about 8 minutes), adding more flour to keep the dough from sticking if necessary. Do not add too much flour! The dough will become more workable the longer you knead.

Transfer the kneaded dough to a lightly oiled bowl. Cover with plastic wrap and a clean kitchen towel. Let the dough rise in a warm area until it doubles in size, about 2 hours.

Punch dough down, divide into 12 equal portions, and shape each portion into a round ball. Place in a pan (or on baking sheets) coated lightly with cooking spray. Cover with a kitchen towel and let it rise for another 20 minutes.

Preheat oven to 400 degrees F.

In a small bowl, combine the melted butter and 1 tablespoon honey. Brush over the rolls. Bake for 10-13 minutes or until lightly browned. Serve warm or at room temperature.

I read somewhere that if you are going to freeze before baking, you should use twice the called-for amount of yeast to compensate for the yeast spores that will die during the freezing process and then let it thaw and rise for the last time before baking. Anyone tried to freeze the recipe as is?

I made these tonight for a community meal. They smelled heavenly on the car ride holding the warm basket. At the dinner, I didn't even manage to get one! They were snapped up so quickly. In my haste I even forgot the honey butter topping, but I had several people beg for the recipe. This is a keeper. Now I need to go bake a batch so I can have some!

Wow, I made these today and they're wonderful! I made the dough in my bread machine, because I just didn't feel like kneading, had too much else to do! I separated it into what I thought were 10 small circles, but ended up getting 10 hamburger bun sized rolls! Too bad they're honey flavored, because I sure would love to try one with a hamburger! LOL! I think I will make another batch that are much smaller, dinner roll size rolls for Thanksgiving. Thanks!

I made another batch for Thanksgiving dinner. I left out the honey this time, except for a tablespoon or so in the dough, for the yeast. Made the balls much smaller this time and put them in the pan so they'd stick together and look more like the pics above. They turned out wonderful! Just brushed the tops with butter instead of honey butter.

I have made these twice now and I don't know if I will ever want to make a different dinner roll. These are soft and slightly sweet. Delicious!

I have never been able to find a good bread recipe. I found this yesterday and had to try it. They are awesome and easy.
I did soften 2 Tbls. of butter and add it to the mix and cooked them at 350 because my oven tends to burn the bottoms of rolls at 400.
I put the balls of dough in my muffin pan and they rose up to make the best rolls I have ever made.
I'm thinking of trying it to make a loaf of bread. I bet it will be pretty tasty.

I just attempted to make this. However, it was SOOOOO sticky my husband said it wasn't right, and start over. I was not giving up. He was able to "knead" it for me, add more flour, and get it in to a ball. It's rising now, but he's not optimistic it's going to turn out. We'll see!!!
Anyone else find the dough to be too sticky? This is my first time making "bread" I was a nervous wreck. I don't have a mixer, so had to knead by hand. Thanks!

Ugh... that second photo. It looks so soft and pillowy and perfect! I absolutely love dinner rolls. I'm stubborn and keep trying to make whole wheat dinner rolls, but I think I should just give up when something like this exists. There's no way anything can be as good.
What my kids miss most about our local family restaurant that closed is the basket of warm, slightly sweet yeast rolls our server brought to the table with our drinks. When I saw these on Pinterest, I immediately thought of those rolls. I made these today, a double batch, actually. These are arguably even better than those restaurant rolls. I used all purpose flour (stirred, spooned into cup, leveled), my Kitchen Aid stand mixer with dough hook and found the dough VERY sticky even after 5-7 mins.. I added flour several times (probably close to another cup for this double batch) and kept it kneading in the mixer for a few minutes more, until it at least came together in a very soft ball. The dough was still too sticky to easily work with after the first rise but I found sprinkling flour lightly over the surface let me pull off bits to shape into balls without too much trouble. They were tender and delicious,. not at all tough. Will definitely make these again and again. But not too often, because they are way too good to be good for me.

Made these tonight after searching for a recipe that wasn't gigantic and was easy. I used a warm microwave to help the dough rise - worked like a charm. My kids are eating some for bedtime snack right now.
Has anyone put them in muffin tins to make another sort of dinner roll?? I am wondering how these would work that way. .... SO GLAD I found this recipe!!!

I made these over the weekend, I'm new to bread making, and have had some successes and flops. I used my stand mixer to do the kneading, made the entire process easy. The rolls turned out fluffy and light, with a subtle flavor of honey. I'm doing my pre-Thanksgiving baking to find a roll I want to make for the 16 people coming over. I refrigerated them when they cooled completely, and 2 days later brought leftovers to work, and they're still perfect. The only issue I had was, I made them in a pie tin, and the center ones didn't bake, I had to bake the rolls an additional 10 min. Next weekend I'm going to try them again as a pre-run to Thanksgiving, and put them on a cookie sheet. Thanks for the great recipe!

I just made these this morning. They were great and loved by all of the neighbors around me (my New Year's gift to them!).
I doubled the recipe for a big batch, cut them to 2 1/4 oz. balls of dough, rolled them, proofed them and baked them. I brushed the honey-butter before AND after baking. Amazing.

hi Kristin, I have made your hot cross buns (almost the same as this except with raisins & orange peel) but they came out dense. the taste was out of this world though! The next day could be used as ammuniton! tried again today a little better but still dense. Nothing like yours, what could i be doing wrong?

Shelley-- There are a couple things that could be to blame. Most likely, you are adding too much flour. The dough may be sticky, but the less flour you add, the softer the final product will become. Secondly, you may not be allowing the buns enough time to rise. While I give estimates for how long you should allow the rolls to rise, they may need a half or hour longer to rise properly. They need to visibly double in size. Thirdly, you may be overbaking the rolls. If they are coming out of the oven hard, chances are that they are overcooked. Your oven may be running hot or something else may to be to blame, but baking them for less time should help.

Thanks Kristin, will try again. Do you think the fact we are in Southern hemisphere (South Africa) and at sea level makes any difference to the quantities and times? Sounds dippy I know but have read something to that effect in the past. Your recipes are fabulous and think you are the best kept secret. NicoleB--Instant Yeast can be used interchangeably with active dry yeast. Since I don't know how much is in a packet, I would measure the same amount from there.

Nicola-- It will not work with self-rising flour. These rolls rise up with yeast, not baking powder and to double up would not produce an ideal product.

OMG, tried the recipe, substituted 1/2 or regular flour for 1/2 whole grain flour. They turned out AMAZING, my kids loved them. Next time I will fill them 6 with cheese other 6 with chocolate ;)

This sounds pretty easy.... But can you help me out. I'd like to make them for our family dinner, and I would need to freeze them..

I go to church in the morning, but that's 45 minutes away.. Church (easter celebration and word) is another 3 hours or so... And then we have another 20-30 minute drive to where we are all meeting for dinner. My long after that, will we eat...

What can I do with this recipe so I can make them?

Michelle-- I would actually bake the rolls the morning or evening before, wrap them up tight after they cool, and pop them in a hot oven 8-10 minutes before serving. They will soften and become tender once more and it is much less of a worry for you!
