Peanut Butter Banana Oatmeal

A new year has arrived, bringing hopeful expectations and cheerful intentions. I feel pressed to make a list of resolutions, as so many friends have done and shared. Two years ago I made a list and shockingly accomplished everything I wanted. Last year I hastily found myself joining the bandwagon late, divining a list of January 5th resolutions that were immediately tossed to the wayside—the single resolution that was accomplished was by shear accident and without intention.

Resolutions have always felt so pressure-filled to me. While others may find them encouraging, my list of resolutions tends to stare at me from my desk, a stark reminder that I am nowhere near crossing them off.

This year I've decided not to make a list of resolutions. Truthfully, I don't really have anything new to add to it. I already try to exercise regularly. Eating healthy has become a lifestyle choice for me, one I have been trying to follow for years. It is a decision I face three times a day. Like anyone, I have good days and bad days, but I do not disgrace myself based on the outcome. I fear that if I put Eat Healthy on my list, I'd only end up in a negative pattern of self judgement. There is no beginning, end, or easy system for measuring healthy eating without dieting—it is just a factor of life.

Despite a lack of resolutions, I do have many goals for myself, both shared and unspoken. Most of them are purposely vague, such as become a stronger writer or become a compelling photographer; they are not easily measurable, a work in progress for a lifetime instead of just twelve short months. For these and many more reasons, it is liberating not to have a handwritten list judging me this time around.

Even so, I have many friends that begin new diets in the New Year. Undoubtedly, I hear stories of one or two who have started skipping (or continue to skip) breakfast to save on calories. These decisions are often followed with excuses (I am never hungry in the morning or I don't have time). After a few years as a breakfast skipper myself, I am now a strong believer in a hearty breakfast. A proper, stick-to-your-bones meal can hold me over until the middle of the afternoon and I really do find I eat less during the rest of the day.

In a way, this oatmeal is for my breakfast-skipping friends—a reminder not to skip the most important meal of the day. It may even be a subtle nudge for you. I know for certain, however, that this oatmeal is for me, too. Healthy and gloriously delicious, I could eat this every single day.

Peanut Butter Banana Oatmeal

Peanut Butter Banana Oatmeal is hearty and satisfying. Mashed banana gets cooked along with the oats, pervading the oatmeal in a wonderful manner. Peanut butter complements the flavor while a pinch of salt brings out the sweetness of the banana. Topped with a pinch of brown sugar and sliced banana, this is a filling breakfast that will certainly hold you until lunch.

One Year Ago: Peppermint Hot Chocolate
Two Years Ago: Peppermint Ice Cream and Banana Cinnamon Muffins

Peanut Butter Banana Oatmeal

Yields 2 servings

1 1/4 cups (295 ml) milk of choice
1 large (or 2 small) banana, mashed
Pinch of salt
1 cup (80 grams) old fashioned oats
2 tablespoons peanut butter
2 teaspoons brown sugar, packed (optional)

In a large saucepan, whisk together the milk, mashed banana, and salt. Bring the mixture to a boil over medium heat. Add the rolled oats, turn down the heat to low, and simmer for 5 minutes, stirring occasionally. The oats are done when soft and the liquid has been absorbed. Stir in the peanut butter.

Divide evenly between two bowls, top each serving with a teaspoon of brown sugar and extra slices of banana. Serve hot.

I go wild for oatmeal in the morning, and this recipe is so fabulous! Great idea!
After many years, I feel very much the way you do about resolutions. I already try to do the best I can, so making resolutions to do better just seems to be overkill.

I'll have to give this oatmeal a try. I'm one of those "breakfast-skipping" people. And even when I think about breakfast, I usually end up eating lunch.
I'm so glad I found this. My boyfriend was bugging me earlier to quit skipping breakfast or eating so many breakfast tacos at work and eat better. Can't wait to try this out!

I never remember my resolutions. I make them in the begining of january and by January 31st they are all out the window sitting in a puddle somewhere.

I know for a fact I'm not eating healthy, so I do want to change that. I really need to decrease my sugar intake and I should probably get more protein in my diet. I can't live on PB&Js, and granola bars for the rest of my life. It's not practicle. So instead of "dieting" I'm going to save PB&Js for maybe once or twice a week and not eat as many granola bars. With that goal and a goal of exercising 3 or 4 times a week, I think I'll end up healthier.

Anyways that was long, but you inspired me, haha. This oatmeal looks really delicious! Can't wait to try it.

One of my resolutions is to actually eat more oatmeal. I get so sick of it though! This would be a fun recipe to add into my routine!
I NEVER skip breakfast - it's the most important and often most delicious meal of the day. I love the sound of this oatmeal - almost good enough to be a dessert too!

I'm writing the first time but am reading your blog for at least a year. Cannot stop admiring your photos. Style, colors, arrangements - everything is in place!

I'm glad to read that your return to breakfasting! This is the most important meal of the day, in my opinion.
I'm originally from Russia and we have a saying: " Eat breakfast yourself. Share the lunch with a friend. Give the dinner to your enemy".
Not that, as a nation, we are following this rule very well, finding an excuse in a severe weather condition and needing more "fuel' to survive the cold.
But honestly, - You eat nice meal in the morning and then you spend that energy during the day, while having hearty dinner at 7:00 pm makes you store the consumed "wealth" through the night! Don't you think?

For years we've been in a big rut as far as breakfast is concerned. I only fix breakfast on the weekends and my hubby is a big bacon and eggs man. I've been trying to think out of the box lately and your Peanut Butter Banana Oatmeal recipe was just the ticket this morning!
It was so comforting and yet not the average oatmeal I've made for over forty years. We loved it!
So nice now to have another recipe in my arsenal that is quick and tasty!

I just tested out the oatmeal this morning. I was surprised by how fast the oats cooked. The mashed banana gave it a nice sweetness to it and I ended up adding some Greek yogurt, a drizzle of maple syrup and cacao nibs on top.

Sarah-- Yes, you can. Just keep in mind that the amount of oatmeal/milk WILL be different (follow the directions on the box) and it will cook for 20-30 minutes instead of 5.

This seems delicious! Would it be possible to make a batch in advance and how long would it keep? I have to wake up at 6 in the morning and there never seems to be time to make something.

Martje-- You can make it the evening before and reheat it in the morning (I've done this before with pretty good results).
