Blackberry Fool

The spring sun has struck me with an incurable fever. Even though snowflakes were falling from the sky just this morning, I long to shed my winter coat and find myself no longer craving the hearty soups and dishes of winter. My mind has begun spinning towards lighter fare and short sleeves. I have begun craving the sweetness of a ripe strawberry and the bold tartness of a stalk of rhubarb in vivid detail. If I shut my eyes tightly, with the sun streaking through the window late into the evening, I can almost pretend the world outside is green and ready to be planted with seeds of rebirth.

I shall never take for granted the arrival of spring again.

Blackberry Fool

Craving a feeling, person, or place brings out a yearning in our heads all the way down to our toes. When our heart's desire is out of reach, we find a way to bring it closer through hope and longing and daydreams. These wishes, both small and large, sustain us as we wait for our cravings to be sated. They sustain us until our cravings come to pass.

I am craving spring. I am craving green grass, the smell of new growth, the touch of a warm sidewalk, the sweetness of a beautiful, red ripe strawberry. The hunger grows daily. As the sun sets later each evening, my appetite becomes insufferable. Knowing warmer weather will be around the corner keeps my spirit up as I dream of the long walks I will take once this winter is done.

Soon, soon, soon.

Blackberry Fool

A "fool" is a traditional English fruit dish originating in the sixteenth century. The dessert was most commonly made with gooseberries, but a variety of fruits from raspberries to apples can be used its place. The three main ingredients to a fool are pureed fruit, whipped cream, and a sprinkling of sugar. For this Blackberry Fool, I used fresh blackberries with whipped cream and a seedless blackberry jam.

This may be a more modern take on a traditional dessert, but the result is the same—delight. Feel free to try out other berries with matching flavors of jam, such as blueberries or strawberries, to play around with flavors and preferences.

Blackberry Fool is a light, sweet ending to a spring or summer meal. Seedless blackberry jam is folded into whipped cream and layered into a glass with fresh blackberries. Blackberry Sour Cream Coffee Cake

Some days I feel as if I've grown up suddenly, my personality changed and shaped by time and the world around me. It's as if I woke up one morning a different person, but I can't seem to pinpoint what those differences may be. Some days I feel the same as ever, my nature indistinguishable from the eight year old girl who walked to school each day with a heavy backpack on her back. As much as I'd like to believe I've grown into a young woman, it's easy to feel like a child posing as an adult, identifying with the Hollywood films where teenagers wake up to a thirty year old body and realize they can eat as much ice cream as they'd like (or, in my case, cake).

I think the truth lies somewhere in between, a mixture of new characters and old habits evolving over time.

Some days I do things that embarrass me, mortified by the words that came out of my mouth or an action I took in a moment of uncertainty. In the small moments of personal shame that follow, I vow never to do or say such a thing again. Sometimes I have similar moments with similar circumstances (I am, after all, the same person often making the same mistakes as I strive to change), the desire to grow up and be someone else never more present. Some days I surprise myself, doing something brave or confident and, though it seems out of character for a moment, I wonder if this is what it means to mature and grow a little wiser.

When I go back and watch old family movies, it makes me realize how my true nature really hasn't changed as much as I imagined. As I view the home movies with my family, I'll often comment on what's happening, only to have the much younger version of me make the exact same observation using identical words a moment later. Though I often share a kindred spirit with a younger me, it's eerie to visually see how little I've changed over time, at least in some aspects.

When I was younger I thought I would be a completely new person as each major stage hit my life. I thought I would feel differently somehow, when I went from elementary school to middle and from middle to high school—older, wiser, less shy, more confident. As each new stage approached, I was left with the realization that I wasn't changed in any significant way than before (except, perhaps, I had grown a little taller).

The changes our natures go through as people, as individuals, as children as much as adults, are so small, so modest, that if you weren't paying attention perhaps you'd never notice the transitions. I catch these minute changes when I no longer shy away from conversations with people I don't know. I uncover them when I do something brave and strong that I would have been intimidated with months or years before. Perhaps I notice them most when meeting with old friends I haven't seen in awhile, realizing how different we've both become.

Today, I may be a completely different person than I was yesterday. I think, however, that it's for the better.

Peach & Blackberry Galette

If given the choice between cake and pie, undoubtedly I would choose cake. I come from a cake family, specifically chocolate cake, where frosting spatulas are licked clean and rarely a birthday passes without one gracing the table. I know cake well; we have become close friends over the years.

Pie, on the other hand, was not a large part of my childhood. Every Thanksgiving, my grandmother made it a point to place a chocolate pudding pie in front of my father and a pumpkin pie in front of my mother, but that was quite the extent of my family's involvement with pie. There were no pies enjoyed in the heat of summer or the chill of winter. Instead, the pies were replaced with other beloved desserts; there were puddings during the Fourth of July and cheesecakes during Christmas. Even so, the best part about food is that there is always time to make up for lost pie.

Galettes are a simpler, easier-to-assemble version of pie. Instead of using a pie pan, the pie crust is spread out on a baking sheet, the filling is poured in the middle, and the edges of the pie crust are folded up and in to hold in the sweet fruit. I love the rustic look and feel of a galette. It feels as old and loved as time, striking a sharp contrast against the perfectly assembled bakery pies. As it bakes, the fruit sings, staying within the bounds of the flaky pie crust, and releasing juices that thicken once the galette begins to cool. Served warm, room temperature, or cool, these galettes are just right.

Today, I choose pie.

The crust is an all shortening crust (perfect for vegans!) and bakes up into fantastic flaky, crusty layers.
