Peanut Butter Chocolate Frosted Cake

Peanut Butter Chocolate Frosted Cake

Dear Friend,

It's been awhile since we've last spoken. Months, years—I've lost count. We used to be close, you and I, talking and laughing over ordinary events and everyday life. We discussed the simple things, such as what we were making for dinner, as often as the big events, the events that would eventually lead our lives away from each other and down different paths.

We no longer live in the same place together, now separated by time zones and countless miles. Our friendship held in the beginning. Though we never talked as often as we wished, we made time now and then to sit in front of a computer and catch up, stealing glimpses of each other's new lives through our living room backdrops. A painting here, a splash of color there; foreign to me, but so familiar to you.

Then, as time predicted it would, our friendship grew strained. A missed call here, a forgotten reply there, and we began to drift apart. As our new lives took hold, it all but seemed to evaporate together. We didn't talk anymore, but we thought of each other often and then less. I learned about your daily life online, so informal and impersonal, but I would take it over silence.

Time and distance pulled us apart. We had fallen victim to the most common reason of lost friendship. We were not the first, nor will we be the last, but knowing this doesn't make it any easier to stomach. Perhaps it was the right time for our friendship to come to a close. Perhaps we will never know.

I feel as if too much time has passed to reach out to you and pretend as if we still are the friends that we were so long ago. I'm torn between writing you to say hello and never writing words to page in the first place. I think of you every now and again, wondering what your daily life is like, hoping that you are happy. I do wish the dearest of happiness to you.

If we do find each other again, I'd love to invite you over for an afternoon, where we could drink coffee and eat cake and talk about simple things and big events. I'd make you this cake, a combination of flavors that you loved more than I ever did. I'd love to hear how you are doing. I've missed you.

As always,
Me

Peanut Butter Chocolate Frosted Cake

Peanut Butter Chocolate Frosted Cake is a classic cake with a familiar flavor combination. The cake is mixed with peanut butter, which permeates the cake through and through. The final cake is dense, but moist. Spread with a thick chocolate buttercream, it begins to taste dreamy. This is the type of everyday cake that should be enjoyed with friends and loved ones, on sunny afternoons with a side of conversation.

Chocolate Almond Biscotti

Chocolate Almond Biscotti

My life has been full of simple pleasures lately. Dunking a few Oreos in my weekend cup of freshly ground coffee. A night spent out at the movies, stashing a small snack in my coat pocket (don't pretend you haven't done it). An expensive plate of sushi because life is too short not to enjoy good food. A bottle of Cabernet Sauvignon to accompany a simple spaghetti weeknight dinner.

The pleasures may be small, but together they form a contented moment in time.

As a first year teacher, I don't have a lot of time to myself. My days are filled with teaching, my afternoons with grading, and my evenings with lesson planning. In the last few months, I have spent most of my time cooped up in my apartment, partly due to the workload, partly due to the frigid, unforgiving weather. These simple pleasures often provide a bright spot of light to an otherwise normal day. Simple, yes, but they add the right level of spice.

Treating yourself comes in many forms. How have you treated yourself today?

Chocolate Almond Biscotti

Chocolate Almond Biscotti is one of the small pleasures I enjoyed last weekend. Biscotti is a simple dessert, though it often appears more complex than it is. The word "biscotti" means twice cooked and that is precisely what these cookies are. Cookies are baked up as a "loaf" before they are sliced, laid on their sides, and baked once more. As the baker, you have the control over how soft or crisp these cookies become, adapting them precisely to your taste.

Dipped in coffee, tea, or a large glass of milk, these cookies are happiness in its pure and simple form.

Chocolate Almond Biscotti are crisp and best enjoy while dunked into your favorite beverage. Cocoa powder provides a deep chocolate flavor to the cookies while toasted almonds give them their crunch. A light chocolate drizzle helps to set the cookies off, providing just the right amount of decadence. Whether enjoyed during a stolen moment in the morning or as an afternoon snack, these biscotti bring about a sweet moment to be savored.

Pear Chocolate Scones

Pear Chocolate Scones

The melancholy part of winter has arrived for me. After so many months spent in my small one bedroom apartment, working and sleeping, I feel cooped up without an escape. The weather has been frightful, with temperatures in the negative numbers and windchills even lower. Lately, though, no one bats an eye at the forecast anymore. Perhaps we are becoming one with the arctic.

On days like these I wonder what it would be like to live where winter weather doesn't mean that one needs to bundle up from head to toe to stay alive when they walk out the front door.

In the summer, the sun casts a golden light on the world. The feeling of the sun on the face warms the skin all the way down to the soul. In the winter, the very same sun has a sharper edge. I no longer welcome the sun as before, wishing for cloudy skies instead. The sun's light is harsh, reflecting off the white ground with a blinding intensity. The sun no longer warms, but leaves a bittersweet reminder of the summer months so far ahead and so far behind.

Oh, those winter blues...

Pear Chocolate Scones

On a snow day from school this week, I made a cup of tea and turned on the oven to bake. With the wind blowing its fiercest, I rolled up my sleeves and mixed up a warming batch of scones. Scones are simple fare and this recipe is no exception. The act of mixing together the ingredients by hand, cutting in the butter and forming the dough with my fingers and palms, have a healing effect.

The melancholy air lifts and, for a few moments, I can enjoy my creation in peace.

Pear Chocolate Scones

Pear Chocolate Scones combine subtle flavors in a breakfast treat. Ripe pears are diced up and folded into a basic scone recipe with a few chocolate chunks. The choice of pear is of little consequence—Bartlett, Bosc, or Red pears will do. When finished baking, the scones emerge flaky and ready for tasting. The scones are best enjoyed the day they are prepared.
