Pumpkin Spice Oatmeal

I like to wake up and eat hot, nutritious breakfasts. I don't care if its a cold winter day, where the cereal will warm my insides and keep them warm on the walk to school, or if its a hot summer day and my insides will slowly roast for the next couple hours. It just isn't a good start to the day if there isn't a steaming bowl of cereal in front of me.

Almost every single morning for the past 18 years, I have eaten a large bowl of Coco Wheats for breakfast. By now, I don't even really taste the coco wheats--they have just become a part of my morning routine. I bet I could make them blindfolded. I cook them methodically. Put in exactly the same amount of sugar. The same amount of milk. Make sure I get exactly the right amount of lumps. It's has become an art form.

So last night, when my dinner choices consisted of Coco Wheats, Cream of Wheat, and oatmeal, I was okay with this. My cupboards may resemble those of an old woman, but I can't help but love the subtly sweet, easily digestible, creamy wheat and oat cereals. And so I made this pumpkin spice oatmeal again for dinner. And it was wonderful.

This pumpkin spice oatmeal tastes like pumpkin pie. And you get to eat it for breakfast! And its healthy! I love letting the brown sugar melt on top. It makes brown, sugary rivers through the oats and it reminds me a crème brûlée. This oatmeal tricks your mind into thinking you are eating a decadent dessert for breakfast (but your body is happy from all the nutrition). The perfect breakfast for a brisk autumn morning.

Pumpkin Chocolate Chip Cookies

These pumpkin cookies have become a staple in my life. I have tried to share these cookies with all of my nearest and dearest friends, as they were shared with me. These cookies may be simple, but they are as much of a comfort to me as the company of a good friend.

My friend Natasha shared this recipe with me years ago. Whenever either of us makes it, we make it a point to share these cookies with each other. We may not see each other often, but when we do we try to make the most of it. Once, after not seeing each other for months, the moment we met face-to-face she thrust a bag of these cookies in my hands. I've been saving these cookies for you in my freezer, she said. Do you know how hard it was not to eat these for two months?

I made a batch of these cookies for a snowboarding trip with my physics friends. I thought they would make a good treat after a day on the slopes. So I loaded up my car with cookies and people and off we went. Twenty minutes in, I managed to flip and total my car on the icy roads. After everyone was confirmed in good health (though shaken) and the panic subsided, the next immediate question became ARE THE COOKIES OKAY?

These pumpkin chocolate chip cookies are soft, moist, and cake-like. The pumpkin provides a mild base while the chocolate really makes this cookie pop. If you are looking for a crunchy cookie, this isn't it. These cookies are so delicious straight out of the freezer (which can be oh so dangerous if you are saving them for a later date). These cookies bring back memories of fall and friendship for me. Go make your own memories with these cookies.

Savory Sundays: Pumpkin Alfredo

I have decided to try something exciting and new! Venturing from my deep roots in butter and sugar, I wanted to try a hand or two at savory dishes. I would like to introduce you to a new series aptly named "Savory Sundays" to share my love (and recipes) for breakfast, lunch, and dinner! Each Sunday I will try to present you with a tried-and-true or original recipe to add some flavor to spice up this lazy day.

I like to cook almost as much as I like to bake. If baking didn't have the sugar-laden advantage, cooking might have stood a fair chance. I prefer to cook primarily with whole foods, meaning I try to stick with fresh fruits and vegetables and whole grains as much as possible. I rarely buy processed foods, so you are unlikely to find many cans or boxes in my home (or in any of these recipes).

What I cook is largely dictated by my stomach. Lately, my stomach has been craving the comforting flavors of fall. I have already churned out a few squash desserts (like this pumpkin bread pudding and butternut squash custard), but my squash cravings have yet to be sated. And so I decided it was time to bring those squash flavors to the dinner table.

This pumpkin alfredo is an autumnal twist on a traditional alfredo sauce. The puree adds a subtle hint of pumpkin to the alfredo sauce--faint enough to be noticeable, but not enough to remotely feel as if you are eating a pumpkin pie. Pumpkin and cream are an excellent match (as you well know) and cream-based sauces are no exception. If you are feeling a bit unsure about this combination, just remember that you are adding a secret serving of vegetables to your favorite pasta. And everyone likes secret vegetables.
