Mango Margarita

It was a rainy day, the type where the clouds are heavy and full and the sun stays hidden. I adore when these days come around, Mother Nature's excuse to spend the day relaxed and indoors. Though I don't need to find a reason to bake, these long, gloomy days make it feel just right. The oven never runs the apartment too hot and freshly made cookies and cakes taste just a little bit sweeter.

These days come as a surprise, a small reminder in a busy world to slow down and embrace the calm of a quiet day.

Last weekend was the start of summer break. To celebrate, a round of drinks was in order. I have made it no secret that margaritas are my cocktail of choice and that statement still stands today. In the past, I have played around with winter flavors, but this occasion called for something a bit brighter. With mangoes on sale at the market, it became an easy decision. After whipping up a couple in the blender, my boyfriend and I toasted each other for the coming months.

For sun, for hot afternoons, for cool evenings, for friends and family.

Mango Margarita

Mango Margaritas are a refreshing drink for warm summer nights. A traditional margarita is infused with the puree of fresh, ripe mango. With a squeeze of lime and a shot of triple sec, the fruity drink becomes lip-smacking tart. Though I found two teaspoons of sugar to be just right for me, you could add more or less to your own tastes. Serve on the rocks or blended to suit your own tastes.

Mango Lassi

Lately I have been feeling trapped, confined within the white walls of my apartment, as the wind outside howls and the cold, winter weather lays an oppressive hand over the land. Spring has been lost, mysteriously misplaced, forgotten by Mother Nature. Instead, there are cloudy skies, a dirty snow-covered landscape, and a thermometer registering temperatures below freezing. There is a long standing joke that the Midwest has two seasons—winter and road construction—but this year it rings true. Winter arrived in October and is refusing to leave seven months later, like a bothersome friend overstaying his or her welcome.

All I wish is to trade in my heavy winter coat for a light jacket.

Mango Lassi

It is hard for me to appreciate the subtleties of life, to find the magic in everyday moments, when the weather has put such a damper on my normally cheery disposition. I find myself in sour moods for no reason at all, occasionally perked up by a loved song or silly comment, but the lack of sunny vitamin D eventually pulls it back down. This feeling is electric, affecting the people around me. They talk about spring with an infectious enthusiasm and discuss mowing lawns with an unusual fondness, staring out the windows at the winterscape with a heavy sigh.

No one, it seems, is immune from a case of the mid-April winter blues.

My boyfriend has recently become infatuated with Indian cuisine, tackling Indian dishes with a large frying pan and little success. After tossing another half-finished dish into the trash, he set his sights on something simpler—a Mango Lassi. He had enjoyed several at the local Indian restaurant over the last month and we set out to create one together. Our joint effort was a smashing success, evidenced by the fact that he made five more over the course of the next few days.

In some ways, the simple blend of a few ingredients brought a brightness into the kitchen and sparked a light into my weary soul. It was a hint of the magic I have been searching for, the beginning of a journey into the rebirth of a new season.

Mango Lassi

Mango Lassi is a refreshing, cold beverage originating from India. Lassi is a yogurt-based drink blended with a bit of spice and ice which melts quickly to cool it down. Mango pulp (pureed mango) sweetens and flavors the drink while a sprinkle of cardamom adds warmth. A lassi has been described as a lighter, healthier version of a milkshake (or a smoothie without the blended ice). This mango lassi is lovely when dreaming of hot afternoons and cool drinks in the sun.

Mango Coconut Striped Popsicles

We are in the midst of the dog days of summer. The days are long, the sun is bright, and the nights are cool and fresh. In the summer, I'm drawn to fresh foods, light dinners, and chilled treats. Though my usual desserts during the summer are ripe fruits, some days I just need something a little different. While ice cream can be oh so nice, sometimes it's just too rich to eat by the side of the pool.

I recently rediscovered popsicles after buying a popsicle mold. For the last few years I simply haven't found any hidden away in the freezer, but I can already tell it is going to get plenty of use (especially this summer).

When I was growing up, popsicles were part of the daily culture at daycare. After playing outside all afternoon under the hot sun, my daycare provider would show up in the backyard with a box of popsicles in half a dozen flavors. She'd watch as we carefully made our color selection, breaking up the arguments that popped up when everyone decided they wanted the same flavor. Back then, popsicles weren't about the flavors, they were all about the colors.

Blue was my favorite flavor simply because it would dye my lips and tongue a bright shade of the sea—a fun accessory for any seven year old.

Most days we'd eat them on the front steps, trying to eat them faster than they could melt, a respectable feat on the warmest of days. Other days we were foolish and we'd let our popsicles melt completely in the sun, in their little plastic tubes, until they had turned into a very expensive Kool-aid. We would down the sweet juice in seconds, curiously wishing we had more.

Nowadays I savor popsicles, licking them instead of biting, hoping they last into a little slice of forever.

These Mango Coconut Striped Popsicles have a bold and fresh taste. The popsicles alternate between flavors of mango, coconut, and orange; the variety is clean and energizing, which keeps your taste buds on their toes. The alternating stripes of flavor and color are fun. Though it does take a little longer to make these popsicles because of the freezing time between stripes, the final product is gorgeous and the flavors are lovely. This is a lovely treat to cool you down on a hot summer afternoon.
